A Summer Wine Dinner With Chef Wilder
Chef Randy Wilder and I have been excited about putting together another wine dinner and I hope you'll plan on attending. Chef Wilder has prepared the menu, and now we're in the middle of pairing the appropriate wines. The dinner is Saturday, August 14th at the Sunset Lake Clubhouse. Here's the menu: ~passed hors d'ouevres~ Argyle Brut nv ~first course~ Wok seared Carolina Big Eye tuna served rare over a Szechuan style crunchy noodle salad with sesame seaweed salad and a pickled ginger-cilantro aioli Elk Cove Pinot Gris 2009 ~second course~ Ragout of braised lamb hind shank and roasted peppers over toasted cous cous and aromatic spinach with crumbled Valbresso feta cheese Four Vines "The Peasant" 2007 ~third course~ Spiced rubbed pork tenderloin over a black bean and corn succotach with bacon lardon, haricot very, and a spicy Ancho chile-Bing cherry gastrique Four Vines "Anarchy" 2007 ~dessert~ Caramelized Sandhills peach sorbet in an almond lace basket with fresh berries in a sangria style fruit broth Schramsberg "Mirabelle" Brut nv If you've been to one of these dinners, you know what's in store for you.
